My passion is for sourcing, selling, and promoting the very best American (NYS) cheeses that are far beyond the plastic variety that come to mind when one hears the phrase "American cheese". I want to share this enthusiasm with those who eat well and promote those who respect the land, the resources, the animals, those dairymen and women, the producers, and artisans who combine, art, alchemy, and science into a delicious little product we humbly call "cheese". 

Daniel J. Ellers has an A.S. in Culinary Arts from Finger Lakes Community College (2020) and a B.B.A. in Culinary Arts Management from SUNY Delhi (2022). In addition, he holds certificates from the University of Vermont in Culinary Nutrition and Artisan Cheese Fundamentals, and also level-one certifications from both the Wine & Spirit Education Trust (WSET) and the Academy of Cheese.
